Thanks for stopping in. IF it is gummy then you probably have too much moisture going on in the bread. What specifically are you baking? The bread can get crunchy on the outside but it does soften within a few hours because it is a moist bread.

The only thing that we can think of is that maybe you were baking at 350 instead of 325? That is a common mistake that will cook the bread too fast on the outside. The 350 oven temp is such a common temp that it does get used. It has happen to the Kitchen, too!

I made the pineapple coconut bread and had that problem too. The next time I made it, I made sure to drain the pineapple better and it turned out fine. I know it's not the same recipe as the one you made, but if you try to adjust your oil a little with certain recipes it does help. At least for me anyway.

The baking time is probably your issue. Most of the bread is baked at 325 F.
Make sure you test with a toothpick and remove the bread once it comes out clean!

I have a brand new gas stove/oven. At 325 my bread was burning long before the center was cooked. I tried today with round 3 to drop it to 300, with a bit more success, but it took closer to 70 minutes.
Thankfully with 4 sons it doens't seem to matter how it's cooked, it still vanishes.
