βA gluten-free, casein-free variation for Amish Friendship Bread Starter.β
Ingredients
1 (.25 ounce) package active dry yeast
1/4 c warm water
1 cup gluten free flour blend (such as King Arthur)
1 cup white sugar
1 cup vanilla almond, soy or coconut milk
Directions
- Dissolve the yeast in water. Let stand 10 minutes.
- In a 2 quart glass, plastic or ceramic container, combine the flour and sugar and mix thoroughly.
- Slowly add the milk and dissolved yeast mixture. Cover loosely and let stand at room temperature until bubbly.
- This is day one of the ten day cycle. For the next ten days, handle starter according to the instructions for Amish Friendship Bread.
Kitchen Notes
Use gluten-free flour blend and almond, soy or coconut milk on days 6 and 10 for feeding.

Thank you for the gluten – free and Casein – free recipe. I was wondering if you also had a recipe that was gluten, soy, dairy, and egg free?
You can use ground flaxseed instead of eggs(1T flaxseed/3T water), and probably almond milk.
Oh, The 1 T flaxseed 3 T water equals 1 egg. Has to be ground flaxseed. Mix it together in a bowl, and let it sit for about 5 minutes on counter so it thickens up. Then just add in. You can’t even tell the difference!

I made a 2 loaves of bread tonight using 1 can drained fruit cocktail, chopped red and green candied cherries, 2 tablespoons diced lemon peel and 2 tsp. Pampered Chef Sweet Honey Vanilla Sprinkle in the starter. Baked at 325 degrees for 1 hr. 10 mins. or until toothe pick came out clean in center of bread. Tasted really good.

Have you ever used Splenda in a GF starter? I am diabetic and celiac.

You can leave the sugar out of the starter. Check the starter recipes for the recipe.
Can you use just water instead of milk or milk alternatives?
Hi Johane,
The original sourdough starters just used water, but the classic Amish Friendship Bread recipe uses milk (because of the sugar content and its contribution towards the fermentation process — milk is). You can experiment, of course, and as long as your starter is healthy (bubbling, smells yeasty and fresh), you should be fine. Keep us posted — we’d love to develop our GF and casein-free AFB alternatives!
Hello I was wondering if you could use Rice milk instead of the soy based milks, my son is celiac and has a soy allergy ?
I have (and with almond milk too) and it works but keep checking the starter to make sure it smells yeasty and fresh — I’ve found the non-dairy starters to be much less active so keep an eye on it to make sure it’s doing well.
Which of the different GF flours have people used?
