“A great breakfast bread that’s not too sweet!”
Ingredients
1 cup Amish Friendship Bread Starter
3 eggs
3/4 cup oil
3/4 cup coconut milk
1 cup sugar plus 1 teaspoon
2 teaspoons vanilla extract
1 1/2 cup all-purpose flour
1/2 cup coconut flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 large box instant coconut pudding mix
1 1/2 cups unsweetened shredded coconut
Directions
- Preheat oven to 325° F (165° C).
- In a medium bowl, whisk together the starter, eggs, oil, coconut milk, 1 cup sugar, and vanilla extract until well combined.
- In a large bowl, whisk together the flours, baking powder, baking soda, salt, and pudding mix.
- Add the starter mixture to the flour mixture and gently stir in 1 cup of the shredded coconut.
- Grease two loaf pans, sprinkle 1/2 of the coconut on the bottom, pour batter evenly in loaf pans. Sprinkle remaining coconut on top of the two loaves with 1 teaspoon of sugar.
- Bake for 50-60 minutes, or until a toothpick inserted into the center of a bread comes out clean.
- Allow the bread to cool for 10 minutes before turning out on a wire rack.
- ENJOY!

From Susan: “You can use 2 cups of all-purpose flour instead of coconut flour. You can also use regular milk instead of coconut milk. Sweetened coconut will work, too.”

Boy this sounds yummy. Wish i had some Amish Friendship Bread Starter so I could make a loaf or two.

I used Cream of Coconut instead of coconut milk. Don’t know what the other taste like but this is amazing. Used sweetened coconut too because I didn’t have the other.
