Ingredients

2 1/2 cups powdered sugar
1/3 cup margarine or butter, softened
1 teaspoon lemon extract
3 tablespoons lemon juice

Directions

  1. In a large bowl, cream powdered sugar and margarine with electric mixer.
  2. Mix in lemon extract.
  3. Continue to mix,  scrape down sides and bottom.
  4. Add in lemon juice, one tablespoon at a time, until desired consistency.

Kitchen Notes

Use a large star tip with a decorating bag to frost each cooled cupcake. This frosting works great with the Amish Friendship Bread Strawberry Lemonade Cupcakes.
