Ingredients
2 1/2 cups powdered sugar
1/3 cup margarine or butter, softened
1 teaspoon lemon extract
3 tablespoons lemon juice
Directions
- In a large bowl, cream powdered sugar and margarine with electric mixer.
- Mix in lemon extract.
- Continue to mix, scrape down sides and bottom.
- Add in lemon juice, one tablespoon at a time, until desired consistency.
Kitchen Notes
Use a large star tip with a decorating bag to frost each cooled cupcake. This frosting works great with the Amish Friendship Bread Strawberry Lemonade Cupcakes.
