Yield: 2 loaves

At a Glance

  • omit cinnamon
  • add 2 cups chopped fresh rhubarb
  • add 1-2 tablespoons turbinado sugar for topping

Ingredients (click to print)

1 cup Amish Friendship Bread Starter
3 eggs
1 cup oil
1/2 cup milk
1 cup sugar
1/2 teaspoon vanilla
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups flour
1-2 small boxes vanilla instant pudding
2 cups fresh rhubarb, chopped
1-2 tablespoons turbinado sugar

Directions

  1. Preheat oven to 325° F (165° C).
  2. In a large mixing bowl, add ingredients as listed.
  3. Grease two large loaf pans.
  4. Dust the greased pans with granulated sugar.
  5. Pour the batter evenly into loaf or cake pans.
  6. Top with 1-2 tablespoons turbinado sugar.
  7. Bake for one hour or until the bread loosens evenly from the sides and a toothpick inserted in the center of the bread comes out clean.
  8. ENJOY!

Kitchen Notes

Fresh rhubarb can usually be found year-round in most grocery stores. If you don’t see it, just ask your local produce manager.

    This recipe sounds yummy. I can’t wait until my rhubarb is ready this Spring to try it.

    This did not turn out super well for me. Even though I baked it for 10-15 minutes longer, it was still soggy inside wherever the rhubarb was. Don’t know if I used too much rhubarb (1 1/2 cups) or if it had to do with using mostly applesauce instead of oil… but I wouldn’t make this again.

      Sorry that you didn’t have a good experience with this recipe, Lisa. The applesauce could have been part of your problem as that does make the bread more moist. I would suggest tossing your rhubarb in flour to help cut down on the extra moisture as well.
