Heat your pan over medium heat with olive oil. Grease crumpet rings with oil or melted butter.
Add all ingredients to a medium-sized mixing bowl and combine. If your starter seems too runny, add a little more flour as needed.
Add your prepared crumpet rings to the pan and fill each with ⅓ cup batter.
Continue to cook over medium heat until the top is covered in small bubbles, about 4-6 minutes.
Remove the rings and flip crumpets over. Cook for another 2-3 minutes on this side until lightly golden brown. If the rings are too hot or difficult to handle, you can wait until the crumpets are cooling on a rack and remove then.
Transfer to a wire rack to cool.

Add a handful of raisins (about ¼ cup) or stir in a dash of cinnamon. Craisins are another great option, and would pair nicely with some orange zest. Think blueberries, or maybe even some pumpkin spice! If you'd like a sweeter crumpet, try using a little honey
