Chocolate Instant Pudding
This recipe can be used as a substitute for any Amish Friendship Bread recipe that calls for a box of chocolate instant pudding.
- Mix and store in airtight container.
- Use 1/2 cup of mix per box of instant pudding being substituted.

You do not have to heat this pudding? Just add milk, stir and chill? What if I wanted to make different flavors, such as cotton candy or orange? Do you know how I can make or use a dry flavored ingredient so I can store dry?
Hi Elisa! This pudding recipe is to be used as a dry swap for commercial pudding in Amish Friendship Bread recipes, so I’m afraid I don’t have an answer to your questions. Here’s a link we found to some dry pudding recipes — http://www.budget101.com/frugal/pudding-mixes-196/. I can’t say for sure but I’d expect you’d have a shorter shelf life with any mix that has any liquid ingredients added to it, so I’d keep an eye on that. Good luck!
There are 2 size boxes of instant pudding mix … is the measurement of 1/2 cup to replace the 3.something size or the 5.something size??? I’m thinking it is for the smaller one.
In case anyone’s interested in making a smaller batch, here are the numbers for 1/4 recipe. 🙂
5/8 cup dry milk powder
1 1/4 cup white sugar
3/4 cup cornstarch
1/4 teaspoon salt
5/8 cup unsweetened cocoa powder
btw, 5/8 cup = 1/2 cup + 2 tablespoons

What would you do to make instant vanilla pudding?
So…. Would I just cut down the cocoa to make Milk chocolate pudding?? If so about how much would I cut down to?
How long is this mix good for? It sounds interesting. Can you make it into regular actual pudding? And if yes how much to how much milk? I was thinking of making up a batch to have for bread but I know someone in the house will hear “Chocolate Pudding Mix” and want chocolate pudding 🙂
Hi Cindy! If you store the pudding mix in an airtight container in a cool, dry place or refrigerator, it should keep well for at least two weeks. If you want to make “actual” pudding, mix 2/3 cup dry pudding to 2 cups milk. Heat and stir constantly to boiling, then cool and serve. Hope you enjoy the bread and the pudding!

This is awesome, thank you so much for the recipe! I’m lactose intolerant so I use dry powder creamer instead of the milk powder & it works well.
Since I’m also diabetic, I’m going to try substituting some of the sugar with Splenda. If anyone has already done this, I’d greatly appreciate hearing from you using my personal email address. Thanks so much, Lynn

I just made banana bread using splenda and homemade vanilla pudding. It is incredibly tender. I sampled a crumb and it tasted sweeter than I remember it tasting with regular sugar. I also have some sourdough bread rising. Amxious to see how that turns out.
