“With a few additions, this yummy Amish Friendship Bread cornbread can be made into a quick meal.”

Prep Time: 15 minutes
Cook Time: 25 minutes
Servings: 16
Yield: 16 pieces

Ingredients (click to print)

1 cup Amish Friendship Bread Starter
2 eggs
1 1/2 cups milk
2 teaspoons sugar
1/2 cup flour
1 1/2 cups cornmeal
1/4 cup oil
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder

Directions

  1. Preheat oven 425° F (218° C).
  2. In a large bowl, combine starter, eggs, milk, sugar, flour and cornmeal.
  3. Beat at medium speed for 2 minutes.
  4. Add oil, baking soda, salt and baking powder.  Mix well.
  5. Grease 8″ X 8″ baking pan.
  6. Evenly pour batter in pan.
  7. Bake for 25 minutes.
  8. ENJOY!

Kitchen Notes

Be sure to watch this bread carefully to prevent over browning.

This yummy cornbread can be made into a meal by adding some black beans, grated cheddar cheese, corn kernels and chopped jalapeno peppers.

    I made this bread tonight and had a difficult time with it. At 25 minutes, it was still soupy. Then I baked at 425 for another 15 minutes. It was still doughy in the middle and very heavy. HAs anyone else had difficulty with this recipe? Was it supposed to make (2) 8 x 8 pans?
