“My favorite of the bunch: Amish Friendship Pancakes!”

Prep Time: 10 minutes
Cook Time: 15 minutes
Servings: 24
Yield: 24 pancakes

Ingredients

1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 tablespoons oil
2 cups Amish Friendship Bread Starter
1/2 cup milk (plus 1/4 cup if needed)
1 egg

Directions

  1. Set a nonstick skillet over medium heat.
  2. Combine flour, salt, baking powder and baking soda in a large mixing bowl.
  3. In a smaller bowl, combine oil, Amish Friendship Bread starter, milk, and egg.
  4. Add ingredients of smaller bowl to the ingredients of larger bowl and mix on medium speed.
  5. Spoon batter onto skillet or a greased griddle. Cook until bubbles appear on the surface, then flip and cook until browned on the other side.

Kitchen Notes

Add 1 cup fresh or thawed blueberries, strawberries, or bananas. Add before flipping pancakes over.

From Susan Buetow: “Add in 1 cup of mini chocolate chips to the batter for an extra special treat. Another add in is 1 teaspoon of vanilla and 1/2 teaspoon of cinnamon. These are a family favorite.”

From K Brown: “Add cinnamon chips before flipping the pancakes. These turn out light and fluffy.”

From Shari:”For a Whole Grain Sourdough Pancake variety, use whole wheat flour, rolled oats, and wheat germ with added vanilla and cinnamon.”

    tried some different things pancakes are good . I have the book read it shared it and may read it again soon. can’t wait till the next book comes out and the web site is wonderful lots of good ideals.

    I added vanilla to it and they really did not turn out as well as I had hoped. Might try one more time, not sure yet.

      Sorry you didn’t get the results that you wanted. These pancakes look a bit darker than pancakes without the starter. The starter adds a bit of extra sugar so they do darken when cooked. Try and cook at a lower temp. You can also contact Suzy, who submitted the recipe, and see if she has any tips. :-)

    My family loved these pancakes. They were light and fluffy. The only thing I changed was adding cinnamon chips to the pancakes before I flipped them.

    Burnt my first batch and used starter from day 8 and they still turned out amazing! I added almond extract! Yummy!
